Broccoli Pesto!

My favorite sauce,spread or condiment, how ever you use it is Pesto! I'm always looking for new ways to jazz up my go to recipe. Here's a new idea! Use a healthy green veggie. 

2 cups of blanched broccoli ( cut, clean and toss in boiling water for about 90 seconds. Rinse with cold water to broccoli doesn't continue to cook)
1/3 cup of raw almonds
1 Tp of lemon or lime juice
1/3 cup Parmesan cheese
4 cloves of garlic
1/8 tp of salt 
1/4 cup of coconut milk

*Olive oil to blend until smooth. 

Toss all ingredients in a blender and blend on high adding olive oil until smooth consistency. You may need to stop, check texture and taste, that's ok! 
Pesto should be nice and creamy. 

Add pesto to pasta, quinoa or use instead of mayo on sandwiches! 
Store in refrigerator in air tight container for about 2 weeks.
